Iced Oatmeal Cookies Recipe

Ingredients
  

  • 1 1/2 cups old-fashioned rolled oats, divided
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp fine sea salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 2 to 3 tbsp whole milk
  • 1/4 tsp vanilla extract
  • tiny pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Beat butter with brown and granulated sugars until light and fluffy.
  2. Beat in egg and vanilla until smooth.
  3. Grind 3/4 cup oats into coarse flour. Whisk with flour, baking soda, cinnamon, and salt. Stir dry mix and remaining 3/4 cup whole oats into wet ingredients until just combined.
  4. Chill dough at least 30 minutes. Scoop 1.5-tablespoon portions onto sheets, spacing 2 inches apart. Bake 10 to 12 minutes until edges are golden and centers look underbaked. Cool on sheet 5 minutes, then transfer to a rack to cool completely.
  5. Whisk powdered sugar, 2 tbsp milk, vanilla, and salt until smooth. Add remaining milk only if needed. Dip or drizzle cooled cookies with icing and let set 20 minutes until dry and crackled.

Notes

The 30-minute chill is not included in prep time, so plan ahead. For the best icing crack, make sure the cookies are fully cool and the room isn’t humid.
