- Beat butter, brown sugar, and granulated sugar until fluffy. Add egg and 1 tsp vanilla, beat again.
- Whisk flour, cocoa, baking soda, and salt. Fold into wet mixture until just combined.
- Drop tablespoon-sized balls onto parchment-lined sheets. Bake at 350°F for 8-10 minutes until edges are set. Cool completely.
- Whip cream to stiff peaks. Fold in condensed milk and 2 tsp vanilla. Spread in a parchment-lined pan and freeze until firm, at least 2 hours.
- Place scoops of ice cream onto half the cookies, top with remaining cookies, press gently. Freeze assembled sandwiches 1 hour before serving.
Notes
Cool the cookies all the way down before you add the ice cream, or everything melts into a mess. The ice cream softens quickly, so work in batches of three or four sandwiches and keep the rest in the freezer until needed.
