Ice Cream Sandwiches Recipe

Ingredients
  

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup heavy whipping cream
  • 1 (14 oz) can sweetened condensed milk
  • 2 tsp vanilla extract

Method
 

  1. Beat butter, brown sugar, and granulated sugar until fluffy. Add egg and 1 tsp vanilla, beat again.
  2. Whisk flour, cocoa, baking soda, and salt. Fold into wet mixture until just combined.
  3. Drop tablespoon-sized balls onto parchment-lined sheets. Bake at 350°F for 8-10 minutes until edges are set. Cool completely.
  4. Whip cream to stiff peaks. Fold in condensed milk and 2 tsp vanilla. Spread in a parchment-lined pan and freeze until firm, at least 2 hours.
  5. Place scoops of ice cream onto half the cookies, top with remaining cookies, press gently. Freeze assembled sandwiches 1 hour before serving.

Notes

Cool the cookies all the way down before you add the ice cream, or everything melts into a mess. The ice cream softens quickly, so work in batches of three or four sandwiches and keep the rest in the freezer until needed.
