Ingredients

  • 1 lb deli-sliced roast beef
  • 3 tbsp unsalted butter
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 4 thick slices sturdy white bread
  • Chopped fresh parsley, for serving

Method

  1. Melt butter in a saucepan over medium heat. Add onion and cook until translucent, about 4 to 5 minutes. Stir in garlic and cook 30 seconds.
  2. Sprinkle flour over the onion mixture and stir for 1 minute. Whisk in beef broth a little at a time, then simmer 3 to 4 minutes until thickened. Stir in Worcestershire, salt, and pepper.
  3. Add the roast beef to the gravy and warm over low heat for 2 to 3 minutes, turning to coat.
  4. Toast the bread slices until deep golden and crisp on both sides.
  5. Pile beef onto toast, spoon over extra gravy, top with parsley, and serve right away.

Notes

Deli roast beef can be salty, so taste the gravy after the beef has warmed before adding any more salt. Store any leftover beef and gravy together, but always make fresh toast just before serving.
