Ingredients

  • 1.5 lbs skinless salmon fillet, cut into 1-inch cubes
  • 2 tbsp cornstarch
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp neutral oil
  • ¼ cup honey
  • 2 tbsp hot sauce
  • 1 tbsp rice vinegar
  • 1 clove garlic, minced
  • 1 tbsp unsalted butter

Method

  1. Toss salmon cubes with cornstarch, salt, and pepper until evenly coated. Let sit while you heat the skillet.
  2. Heat oil in a large skillet over medium-high heat. Sear salmon in a single layer for 3 to 4 minutes per side until golden and just cooked through.
  3. Lower heat to medium-low. Add honey, hot sauce, vinegar, garlic, and butter to the pan. Stir until melted, then toss salmon in the glaze for about 1 minute until glossy and thickened.
  4. Spoon onto a plate or over rice and serve right away.

Notes

For a thicker glaze, let the honey mixture bubble for an extra 30 seconds before adding the salmon back. The bites are best enjoyed fresh; leftovers will soften in the fridge but reheat well in a skillet.
