Ingredients

  • 1½ lbs salmon fillets, skin removed, cut into 1-inch cubes
  • 1 tbsp vegetable or avocado oil
  • ½ tsp fine sea salt
  • ¼ tsp black pepper
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 garlic clove, minced
  • ¼ tsp red pepper flakes (optional)
  • 1 tsp sesame seeds

Method

  1. Pat the salmon cubes dry and season with salt and pepper.
  2. Heat the oil in a large skillet over medium-high heat until shimmering.
  3. Add the salmon in a single layer and sear undisturbed for 2 to 3 minutes until golden.
  4. Stir together the honey, soy sauce, garlic, and red pepper flakes.
  5. Flip the salmon, pour in the glaze, and cook 2 minutes, spooning the sauce over the fish.
  6. Remove from heat, toss to coat, and sprinkle with sesame seeds.

Notes

The glaze thickens quickly, so serve the salmon right away while everything is warm and sticky. Letting the salmon come to room temperature for 10 minutes before cooking gives you the best sear.
