Honey Pineapple Salmon Recipe

Ingredients
  

  • 4 salmon fillets (6 oz each), skin on
  • 1 cup pineapple chunks (fresh or well-drained canned)
  • 1/4 cup honey
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp neutral oil (vegetable or avocado)
  • Salt and black pepper
  • 2 scallions, sliced thin

Method
 

  1. Pat salmon dry, season with salt and pepper. Heat oil in a large skillet over medium-high heat. Place salmon skin side down, cook 4 to 5 minutes, flip, and cook 2 minutes. Transfer to a plate.
  2. Add pineapple chunks to the same skillet and sauté for 2 minutes, until lightly browned.
  3. Whisk honey, soy sauce, rice vinegar, garlic, and ginger. Pour into the pan and let bubble 30 seconds. Return salmon, spoon glaze over, and cook 1 to 2 minutes until thick and shiny.
  4. Plate the salmon, spoon pineapple and glaze over the top, and scatter scallions. Serve immediately.

Notes

Let the salmon sit at room temperature for about 10 minutes before cooking so it sears evenly. If the glaze tightens up too fast, add a tiny splash of water and swirl the pan.
