Honey Granola Recipe

Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1 cup raw almonds, roughly chopped
  • 1/2 cup pepitas
  • 1/2 cup unsweetened coconut flakes
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup dried fruit (optional)

Method
 

  1. Heat oven to 300°F (150°C). Line a large rimmed baking sheet with parchment. In a large bowl, combine oats, almonds, pepitas, coconut, salt, and cinnamon.
  2. In a small bowl, whisk honey, melted coconut oil, and vanilla until smooth.
  3. Pour the wet mixture over the dry. Stir until everything is coated, then press firmly into an even layer on the prepared sheet.
  4. Bake 20 minutes, rotate the pan, and bake 10 to 15 minutes more until deep golden. Cool completely on the pan without stirring, then break into clusters and toss in dried fruit, if using.

Notes

The granola will feel soft when it comes out of the oven but crisps as it cools. Leave it untouched on the pan for at least an hour. Dried fruit goes in after baking so it stays plump and soft.
