Method
- Trim the stems and remove any damaged outer leaves from the Brussels sprouts. Halve them lengthwise through the stem.
- Heat the olive oil in a large skillet over medium-high heat. Place the sprouts cut side down in a single layer and cook undisturbed for 5 to 6 minutes, until deeply browned on the bottom.
- Reduce the heat to medium and add the butter, honey, balsamic vinegar, salt, and pepper. Toss to coat and cook for 1 to 2 minutes, until the glaze thickens and clings to the sprouts.
- Toss once more off the heat, taste for salt, and serve immediately while hot and crisp.
Notes
If your sprouts are on the larger side, sear them for an extra minute or two before adding the glaze. The pan may be smoky, so run the vent fan and do not walk away. Any leftover glaze tastes great spooned over roasted squash or sweet potatoes.
