Ingredients
  

  • 1 lb boneless, skinless chicken thighs (or breasts)
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp vegetable oil
  • ⅓ cup honey
  • 2 tbsp soy sauce
  • 2-3 chipotle peppers in adobo sauce, minced, plus 1 tbsp adobo sauce
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 4 cups cooked rice, warm
  • Toppings: sliced avocado, chopped cilantro, lime wedges, quick pickled onions (optional)

Method
 

  1. Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat. Cook chicken 5-6 minutes per side until golden and cooked through. Transfer to a plate.
  2. In the same skillet, whisk honey, soy sauce, minced chipotles with adobo sauce, garlic, and lime juice. Cook 2-3 minutes until bubbly and slightly thickened.
  3. Return chicken to skillet, spoon glaze over, and simmer 2-3 minutes, turning to coat, until glossy.
  4. Serve sliced chicken over warm rice with any extra glaze. Add desired toppings.

Notes

This bowl is best right away while the glaze is shiny. If you have leftovers, store chicken and rice separately. The chipotle heat builds as the bowl sits, so taste the glaze and adjust the peppers to your liking before you coat the chicken.
