- Heat oven to 425°F (200°C). Whisk flour, baking powder, and salt in a large bowl.
- Cut the cold butter into the flour mixture until it looks like coarse crumbs with a few pea-sized pieces.
- Stir in 3 tbsp honey and the buttermilk with a fork just until a shaggy dough forms.
- Turn dough onto a floured surface, pat to 1 inch thick, fold in thirds, and repeat twice. Cut with a 2 1/2-inch round cutter, pressing straight down.
- Place biscuits on a parchment-lined sheet, brush with extra buttermilk, and bake 12 to 15 minutes until golden.
- Mix melted butter and 1 tbsp honey; brush over hot biscuits and serve immediately.
Notes
The butter and buttermilk need to be cold when you start. If the dough feels sticky while shaping, dust your hands and the surface lightly with flour rather than adding more to the bowl.
