- Preheat oven to 400°F (200°C). Pat wings dry, then toss with oil, salt, pepper, 1 tsp garlic powder, and 1 tsp smoked paprika.
- Arrange wings in a single layer on a rack-lined baking sheet. Bake 20 minutes, flip, bake another 20 minutes until golden and crisp.
- While wings bake, whisk ketchup, honey, vinegar, Worcestershire, remaining 1 tsp smoked paprika, garlic powder, onion powder, and cayenne in a saucepan. Simmer 5 minutes until slightly thickened.
- Transfer baked wings to a bowl, coat with three-quarters of the sauce, then return to the sheet. Bake 10 to 12 minutes until sauce is bubbling and charred in spots.
- Pile wings on a platter, drizzle with reserved sauce, and scatter green onions or sesame seeds if using. Serve hot.
Notes
For extra crispy skin, add 1 tsp baking powder to the dry spice mix and toss wings with it along with the oil and seasonings. Let them sit uncovered in the fridge for 1 hour before baking if you have time.
