Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 cup full-fat sour cream
  • 2 tsp vanilla extract
  • 1/3 cup packed light brown sugar
  • 1 tbsp ground cinnamon
  • 1/2 cup all-purpose flour (for topping)
  • 1/3 cup packed light brown sugar (for topping)
  • 1/2 tsp ground cinnamon (for topping)
  • 3 tbsp cold unsalted butter, cut into small cubes

Method

  1. Preheat oven to 350°F (180°C). Line a 9x9-inch metal pan with parchment. Whisk 2 cups flour, 1 1/2 tsp baking powder, 1/2 tsp baking soda, and 1/2 tsp salt in a bowl.
  2. Beat 1/2 cup butter and 3/4 cup sugar until fluffy, about 3 minutes. Add 2 eggs one at a time, then mix in 1 cup sour cream and 2 tsp vanilla until smooth.
  3. Gradually add dry ingredients to the wet, mixing on low just until flour disappears. Do not overmix.
  4. Stir 1/3 cup brown sugar with 1 tbsp cinnamon for filling. For topping, combine 1/2 cup flour, 1/3 cup brown sugar, and 1/2 tsp cinnamon. Cut in 3 tbsp cold butter until coarse crumbs form. Spread half the batter in pan, sprinkle filling, dollop remaining batter and spread gently. Scatter crumb topping over.
  5. Bake 35-40 minutes until golden and a toothpick comes out with a few moist crumbs. Tent with foil after 25 minutes if browning too fast.
  6. Cool in pan 10 minutes on a wire rack. Lift out, slice into 9 squares, and serve.

Notes

If using a glass or ceramic pan, reduce oven temperature to 325°F (160°C) and expect a slightly longer bake time. The cake tastes best the day after baking as the cinnamon flavor deepens.
