Homemade Ponzu Sauce Recipe

Prep Time 5 minutes
Total Time 5 minutes
Servings: 8 (makes about 1 cup)

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 2 tbsp mirin
  • 2 tbsp rice vinegar
  • 1 (2-inch) piece kombu, optional
  • 1 tbsp bonito flakes, optional

Method

  1. Whisk together the soy sauce, lemon juice, lime juice, mirin, and rice vinegar in a bowl until the mirin is fully blended, about 30 seconds.
  2. Add the kombu and bonito flakes if using, and let the mixture sit at room temperature for 5 minutes, or up to 1 hour for more depth.
  3. Strain the sauce through a fine-mesh strainer into a clean jar, pressing on the solids lightly. Discard the kombu and bonito. Refrigerate until ready to use.

Notes

For a vegetarian version, leave out the bonito flakes. The sauce tastes even better after an overnight rest in the fridge, but it’s ready to use as soon as you strain it.
