Ingredients

  • 2 cups unsweetened pomegranate juice
  • 2 cups granulated sugar
  • 2 tablespoons fresh lemon juice

Method

  1. Combine pomegranate juice, sugar, and lemon juice in a medium saucepan. Bring to a boil over medium-high heat, stirring until sugar dissolves, about 5 minutes.
  2. Reduce heat to medium-low and simmer, stirring occasionally, until the syrup thickens slightly and coats the back of a spoon, 10 to 15 minutes.
  3. Remove from heat and let cool for 10 minutes. Pour through a fine-mesh strainer into a clean bottle or jar. Cool completely, then seal and refrigerate.

Notes

The syrup thickens further as it cools. For a floral note, stir in 1 teaspoon orange flower water after cooling. If crystals form in the fridge, warm the bottle gently in warm water and shake.
