Homemade Granola Bars Recipe

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1/2 cup honey
  • 1/2 cup creamy peanut butter
  • 1/4 cup packed light brown sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup roasted almonds, chopped
  • 1/3 cup dried cranberries or raisins

Method
 

  1. In a saucepan over medium heat, stir honey, peanut butter, and brown sugar for 2 to 3 minutes until smooth and just bubbling at the edges. Remove from heat and stir in vanilla.
  2. In a large bowl, toss oats, almonds, cranberries, and salt. Pour in the warm honey mixture and stir until every oat is coated.
  3. Press the mixture firmly and evenly into an 8x8-inch parchment-lined pan. Chill for at least 1 hour until firm.
  4. Lift the slab out using the parchment, slice into 12 bars, and serve.

Notes

Chill the bars for a full hour before slicing so they hold a clean cut. If the mixture seems dry and crumbly while stirring, add 1 tablespoon of warm water or an extra drizzle of honey to bring it together.
