Ingredients

  • 2 cups masa harina
  • ½ teaspoon fine sea salt
  • 1 ¼ to 1 ½ cups warm water

Method

  1. Whisk masa harina and salt in a bowl. Stir in 1 ¼ cups warm water, adding more as needed to form a soft, cohesive dough.
  2. Cover with a damp towel and rest for 30 minutes at room temperature.
  3. Divide into 12 balls. Using a tortilla press lined with plastic, press each ball into a ⅛ inch thick round.
  4. Heat a dry skillet over medium-high heat. Cook each tortilla about 1 minute per side, until spotted with brown and puffed.
  5. Transfer to a kitchen towel, wrap to keep warm, and serve immediately.

Notes

The dough must rest for at least 30 minutes before you press and cook the tortillas. That hands-off time is not included in the prep or cook time above, so plan ahead.
