- In a medium bowl, whisk the egg yolk, anchovies, garlic, mustard, lemon juice, and Worcestershire sauce until smooth, about 30 seconds.
- While whisking constantly, drizzle in the olive oil very slowly, starting drop by drop, until the mixture thickens and looks creamy, about 2 minutes. Add the rest in a thin stream.
- Fold in the Parmesan, season with salt and pepper, and taste. Serve spooned over romaine with extra cheese and croutons.
Notes
This dressing is at its best the day you make it but will keep, tightly covered, in the fridge for up to 3 days. Stir it well before using, and let it sit at room temperature for a few minutes if it feels too thick.
