Ingredients
  

  • 1.5 lbs ground beef (80/20)
  • 1 medium yellow onion, diced
  • 4 cups thinly sliced russet potatoes (about 4 medium)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil

Method
 

  1. Brown the 1.5 lbs ground beef and 1 diced onion with 1 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper over medium-high heat for about 8 minutes, until no pink remains.
  2. Preheat the oven to 375°F (190°C), then layer half the beef, all 4 cups sliced potatoes, and the remaining beef in a greased 9x13 inch baking dish.
  3. Whisk the 1 can cream of mushroom soup with 1/2 cup milk until smooth and pour it evenly over the layered dish.
  4. Cover with foil and bake for 40 minutes, then uncover, scatter with 1 cup shredded cheddar, and bake 10 more minutes until melted and browned at the edges.
  5. Let it sit 5 minutes, then scoop into portions and serve hot.

Notes

If you're doubling this for a crowd, use two separate 9x13 dishes rather than one deep pan, since a thicker casserole needs a longer covered bake and the potatoes in the center can lag behind. This also reheats well the next day, so it's a fine one to make slightly ahead of a busy evening.
