High-Protein Zucchini Bread Recipe

Ingredients
  

  • 1 1/2 cups shredded zucchini
  • 1 cup cottage cheese (full-fat or 2%)
  • 2 large eggs
  • 2 tablespoons melted coconut oil or avocado oil
  • 1/4 cup pure maple syrup or honey
  • 2 teaspoons vanilla extract
  • 1 1/2 cups white whole wheat flour
  • 1/2 cup vanilla protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Blend cottage cheese until smooth; whisk with eggs, maple syrup, vanilla, and oil. Fold in zucchini.
  2. In a separate bowl, whisk flour, protein powder, baking soda, baking powder, cinnamon, and salt. Fold into wet mixture, then fold in nuts if using.
  3. Heat oven to 350°F (175°C). Grease a 9x5-inch loaf pan. Scrape batter into pan, smooth top, and bake 45–55 minutes until a toothpick comes out clean.
  4. Cool in pan 10 minutes, then turn out onto a rack. Cool completely before slicing.

Notes

If using unflavored protein powder, add an extra teaspoon of vanilla extract. The batter can rest for 5 minutes before baking for a slightly better rise.
