High Protein Turkey Tacos Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • ¼ cup finely diced onion
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 (15-oz) can black beans, drained and rinsed
  • ½ cup water
  • 8 small corn or flour tortillas
  • ½ cup plain Greek yogurt
  • 1 lime, juiced
  • ¼ tsp salt
  • Shredded lettuce, diced tomatoes, or cotija for topping

Method
 

  1. Heat oil in a large skillet over medium-high heat. Add turkey and cook 8 minutes, breaking it up, then add onion and cook 3 minutes until softened.
  2. Stir in taco seasoning and garlic, cook 30 seconds. Add black beans and water, scrape the pan, and simmer 5 minutes until thickened.
  3. Whisk yogurt, lime juice, and salt together in a small bowl.
  4. Warm tortillas, fill with turkey mixture, drizzle with yogurt sauce, and top with lettuce, tomatoes, or cotija. Serve immediately.

Notes

If your taco seasoning is salt-free, taste the filling after simmering and add a pinch or two of salt. The lime yogurt sauce can be made a day ahead and kept covered in the fridge.
