High Protein Taco Bowls Recipe

Ingredients
  

  • 1 tablespoon vegetable oil
  • 1 lb lean ground turkey (about 450g)
  • 1 medium yellow onion, diced
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • Salt to taste
  • For serving: 4 cups shredded romaine lettuce, diced avocado, Greek yogurt, shredded cheese, fresh cilantro, lime wedges, salsa

Method
 

  1. Heat oil in a large skillet over medium-high heat. Add turkey, break it up, and cook 5 to 7 minutes until browned and no pink remains. Stir in garlic for 30 seconds.
  2. Transfer turkey to a plate. In the same skillet, sauté onion and bell pepper for 3 to 4 minutes until softened and charring at the edges.
  3. Return turkey to the pan and add black beans, corn, taco seasoning, and water. Simmer 2 to 3 minutes until liquid is absorbed. Taste and add salt if needed.
  4. Divide lettuce among bowls. Spoon turkey mixture over the top, then add avocado, yogurt, cheese, cilantro, and a squeeze of lime. Serve right away.

Notes

For a heartier bowl, serve the turkey mixture over a bed of cooked quinoa or brown rice instead of lettuce. The mixture is also excellent tucked into warm tortillas for tacos.
