High Protein Spaghetti Recipe

Ingredients
  

  • 1 tablespoon olive oil
  • 1 lb 93% lean ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 (15 oz) can crushed tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • 8 oz high-protein spaghetti (chickpea, lentil, or protein-fortified)
  • Salt and black pepper
  • Grated parmesan cheese, for serving

Method
 

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground turkey, season with salt and pepper, and cook for about 6 minutes, breaking it up, until no longer pink.
  2. Stir in the onion and garlic and cook 3 to 4 minutes, until softened. Add the tomato paste and cook 1 minute, then pour in the crushed tomatoes, oregano, and red pepper flakes. Simmer for 15 minutes, stirring occasionally.
  3. Meanwhile, cook the spaghetti in salted boiling water according to package directions until al dente. Reserve ½ cup pasta water, then drain.
  4. Toss the spaghetti with the sauce, adding splashes of reserved water if needed. Serve in bowls with plenty of grated parmesan.

Notes

Chickpea spaghetti has a slightly nutty flavor that pairs perfectly with the savory turkey sauce. If you cannot find it, lentil or high-protein wheat spaghetti both work well. Leftovers thicken overnight, so be generous with a splash of water when reheating.
