- Heat the olive oil in a large pot over medium-high heat. Add the ground turkey, season with salt and pepper, and cook for about 6 minutes, breaking it up, until no longer pink.
- Stir in the onion and garlic and cook 3 to 4 minutes, until softened. Add the tomato paste and cook 1 minute, then pour in the crushed tomatoes, oregano, and red pepper flakes. Simmer for 15 minutes, stirring occasionally.
- Meanwhile, cook the spaghetti in salted boiling water according to package directions until al dente. Reserve ½ cup pasta water, then drain.
- Toss the spaghetti with the sauce, adding splashes of reserved water if needed. Serve in bowls with plenty of grated parmesan.
Notes
Chickpea spaghetti has a slightly nutty flavor that pairs perfectly with the savory turkey sauce. If you cannot find it, lentil or high-protein wheat spaghetti both work well. Leftovers thicken overnight, so be generous with a splash of water when reheating.
