Method
- Whisk together the mayonnaise, gochujang, soy sauce, sesame oil, and rice vinegar until smooth. Set the spicy sauce aside.
- Drain the tuna and place it in a bowl. Flake it into bite-sized chunks with a fork and toss with a small splash of soy sauce and a few drops of sesame oil.
- Divide the warm rice between two bowls. Top each with the seasoned tuna, edamame, cucumber, carrot, green onions, and soft-boiled eggs if using.
- Spoon the spicy sauce over each bowl and sprinkle with toasted sesame seeds. Serve immediately.
Notes
If you do not have gochujang, mix sriracha with a pinch of sugar for a similar heat and a little sweetness. The soft-boiled eggs add a luscious richness but are optional if you want to keep this a true no-cook meal.
