High Protein Potato Soup Recipe

Ingredients
  

  • 3 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 3 medium russet potatoes (1.5 lb), peeled and cut into 1/2-inch dice
  • 4 cups low-sodium chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup full-fat cottage cheese (4%)
  • 1 cup diced cooked ham
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook, stirring, for 5 minutes until soft. Add garlic and cook 1 minute.
  2. Add diced potatoes and cook 2 minutes. Pour in broth, salt, and pepper. Bring to a boil, then reduce to a simmer. Cook 15-20 minutes until potatoes are fork-tender.
  3. Remove from heat. Blend about half the soup with an immersion blender until creamy with some chunks remaining.
  4. Return pot to low heat. Stir in cottage cheese, ham, and Parmesan. Warm through for 2-3 minutes, do not boil.
  5. Ladle into bowls, top with extra ham and Parmesan, and serve hot.

Notes

The soup thickens after blending and as it cools. When reheating, add a splash of broth or water and warm gently over low heat. A full-fat cottage cheese blends smoothest, but 2% works in a pinch if that’s what you have.
