High-Protein Peanut Butter Cookies Recipe

Ingredients
  

  • 1 cup creamy natural peanut butter
  • 1/2 cup honey
  • 1 large egg
  • 1/2 cup vanilla protein powder
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking soda
  • Pinch of salt (if peanut butter is unsalted)

Method
 

  1. Heat oven to 350°F (175°C) and line a baking sheet with parchment. In a large bowl, stir together the peanut butter, honey, and egg until smooth and glossy.
  2. Add the protein powder, oats, and baking soda. Fold with a spatula until no dry spots remain. The dough will be thick and slightly sticky.
  3. Scoop 12 mounds of dough onto the sheet, spacing them 2 inches apart. Flatten each mound with a fork into a disc about 1/2 inch thick.
  4. Bake on the middle rack for 10 to 12 minutes, until the edges are golden and the centers look set but still soft. Cool on the sheet for 5 minutes, then transfer to a wire rack. Serve warm or let cool completely.

Notes

Let the cookies cool fully on the rack before stacking; they are fragile right out of the oven. If your peanut butter is particularly thick or dry, the dough may feel stiff. Stir in 1 additional tablespoon of honey to loosen it enough to scoop.
