Method
- Heat oven to 350°F (175°C) and line a baking sheet with parchment. In a large bowl, stir together the peanut butter, honey, and egg until smooth and glossy.
- Add the protein powder, oats, and baking soda. Fold with a spatula until no dry spots remain. The dough will be thick and slightly sticky.
- Scoop 12 mounds of dough onto the sheet, spacing them 2 inches apart. Flatten each mound with a fork into a disc about 1/2 inch thick.
- Bake on the middle rack for 10 to 12 minutes, until the edges are golden and the centers look set but still soft. Cool on the sheet for 5 minutes, then transfer to a wire rack. Serve warm or let cool completely.
Notes
Let the cookies cool fully on the rack before stacking; they are fragile right out of the oven. If your peanut butter is particularly thick or dry, the dough may feel stiff. Stir in 1 additional tablespoon of honey to loosen it enough to scoop.
