High-Protein Meatloaf Recipe

Ingredients
  

  • 2 lb lean ground beef (93/7)
  • 1 cup cottage cheese (full-fat)
  • 1 large egg
  • ¼ cup almond flour
  • 1 small yellow onion, finely grated
  • 2 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 3 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 1 tsp brown sugar substitute (or brown sugar)

Method
 

  1. Blend cottage cheese until smooth. In a large bowl, combine ground beef, blended cottage cheese, egg, almond flour, grated onion, garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  2. Shape the mixture into a 9"x5" free-form loaf on a parchment-lined baking sheet.
  3. Stir together 2 tbsp tomato paste, apple cider vinegar, and brown sugar substitute. Brush two-thirds of the glaze over the loaf.
  4. Bake at 375°F for 30 minutes, brush on remaining glaze, then bake 15–20 minutes more until internal temp reaches 160°F.
  5. Rest 5 minutes, then slice and serve warm.

Notes

Blend the cottage cheese until it’s completely smooth before measuring; any remaining curds can leave pockets in the loaf. For the best moisture, pull it from the oven right at 160°F and let it rest that full five minutes before cutting.
