High Protein Granola Recipe

Ingredients
  

  • 3 cups (240 g) old-fashioned rolled oats
  • 2 scoops (about 60 g) vanilla protein powder
  • 2 large egg whites
  • 1/2 cup (50 g) sliced almonds
  • 1/3 cup (80 ml) maple syrup
  • 2 tbsp (28 g) melted coconut oil
  • 1/4 tsp fine sea salt

Method
 

  1. Stir together the oats, protein powder, almonds, and salt in a large bowl.
  2. Whisk maple syrup and coconut oil, then beat egg whites until frothy. Fold both into the dry ingredients until evenly coated.
  3. Preheat oven to 325°F (165°C). Spread the mixture onto a parchment-lined baking sheet and bake for 20 to 25 minutes, stirring once at the 10-minute mark.
  4. Let the granola cool on the pan undisturbed for at least 30 minutes, then break into clusters.

Notes

Break the granola apart after it has cooled completely or the clusters will crumble. If you add dried fruit, wait until the granola is cool so the fruit doesn’t harden.
