Ingredients

  • 1 lb boneless skinless chicken breast, cut into bite-size pieces
  • 3 cups cooked day-old white or brown rice
  • 2 large eggs, lightly beaten
  • 1 cup frozen peas
  • 1/2 cup shelled edamame
  • 3 scallions, thinly sliced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • Salt and black pepper

Method

  1. Heat 1 tbsp vegetable oil in a large skillet over high heat. Season chicken with salt and pepper, cook 5-6 minutes until golden, then transfer to a plate.
  2. Lower heat to medium, scramble eggs until soft curds form, about 1 minute. Transfer to the plate with the chicken.
  3. Return heat to high, add the remaining oil, then scatter rice in an even layer. Cook undisturbed 2 minutes until bottom is crisp. Stir in garlic, ginger, peas, edamame, and scallion whites. Cook 2 more minutes.
  4. Return chicken and eggs to the skillet. Add soy sauce and sesame oil, stir 1-2 minutes until evenly coated.
  5. Scoop into bowls, top with scallion greens and extra sesame seeds if you like. Serve hot.

Notes

For the best texture, start with cold, day-old rice. If you only have fresh rice, spread it on a tray and chill in the fridge for 20 minutes before frying. A teaspoon of fish sauce added with the soy sauce deepens the savory notes without tasting fishy.
