High Protein Energy Balls Recipe

Ingredients
  

  • 1 ¾ cups rolled oats
  • ½ cup vanilla protein powder
  • ½ cup natural peanut butter
  • ⅓ cup honey or maple syrup
  • ¼ cup mini dark chocolate chips
  • 2 to 3 tablespoons milk

Method
 

  1. In a large bowl, stir together the rolled oats and protein powder until evenly combined.
  2. Add the peanut butter, honey, and 2 tablespoons milk. Stir until a thick dough forms, adding the extra tablespoon of milk if needed to help it hold together.
  3. Fold in the chocolate chips. With damp hands, roll the mixture into 16 balls (about 1 ½ tablespoons each) and place on a parchment-lined plate. Refrigerate at least 30 minutes, then serve cold.

Notes

Chill the balls for at least 30 minutes before serving so they set up. If the dough feels sticky while rolling, wet your hands again. For a firmer, freeze-friendly snack, leave them in the refrigerator overnight.
