High Protein Egg Muffins Recipe

Ingredients
  

  • 4 large eggs
  • 1 cup liquid egg whites
  • ½ cup low-fat cottage cheese
  • ½ cup shredded sharp cheddar cheese
  • ½ cup crumbled cooked turkey sausage
  • ¼ cup finely diced red bell pepper
  • ¼ cup chopped fresh spinach
  • ¼ teaspoon garlic powder
  • Salt and black pepper, to taste

Method
 

  1. Preheat the oven to 350°F (175°C) and generously coat a 12-cup muffin tin with nonstick spray. Whisk together eggs, egg whites, cottage cheese, garlic powder, salt, and pepper until smooth.
  2. Fold in the cheddar, turkey sausage, bell pepper, and spinach until evenly combined.
  3. Divide the mixture among the 12 muffin cups, filling each about three-quarters full.
  4. Bake 18 to 22 minutes until puffed and set. Let rest in the pan for 5 minutes, then run a knife around each muffin and lift out. Serve warm.

Notes

The muffins firm up a little as they cool, which makes them easier to pack. For the cleanest release, let them sit the full 5 minutes in the pan before you try to lift one out.
