High Protein Egg Casserole Recipe

Ingredients
  

  • 12 large eggs
  • 1 cup cottage cheese
  • 1.25 lb lean ground turkey
  • 1 medium onion, finely diced
  • 1 bell pepper, diced small
  • 2 cups fresh spinach, roughly chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and black pepper

Method
 

  1. Heat oil in a skillet over medium-high heat. Cook turkey until no longer pink, about 5 minutes. Add onion, bell pepper, and garlic; cook 3 minutes. Add spinach and cook 1 minute until wilted. Season and set aside to cool.
  2. Whisk eggs, cottage cheese, salt, and pepper until smooth. Stir in cheddar.
  3. Grease a 9x13-inch dish. Spread cooled turkey mixture in the bottom. Pour egg mixture over it.
  4. Preheat oven to 375°F (190°C). Bake 35 to 40 minutes until the center is set and a knife comes out clean.
  5. Rest 5 minutes, then slice into 8 squares and serve warm.

Notes

Let the cooked turkey and veggies cool for at least 5 minutes before mixing with the eggs, or the eggs will start to cook before baking. The casserole puffs in the oven and settles as it cools—that’s normal.
