- Place the chicken, beans, onion, garlic, carrots, celery, thyme, rosemary, bay leaf, broth, 1 tsp salt, black pepper, and olive oil in a 6-quart slow cooker. Stir gently to combine, then cover.
- Cook on low for 6 to 7 hours or high for 3 to 4 hours, until chicken shreds easily.
- Transfer chicken to a cutting board, shred with two forks, and return to the slow cooker.
- Blend about 1 heaping cup of beans and broth until smooth, stir back into the soup, then add spinach and yogurt. Stir until spinach wilts and yogurt incorporates, about 2 minutes. Adjust salt.
- Ladle into bowls, top with black pepper, and serve hot.
Notes
If you prefer a thinner broth, add up to 1 extra cup of broth at the end with the spinach. The soup continues to thicken as it sits, so keep that in mind for leftovers.
