- Season the chicken cutlets on both sides with chili powder, cumin, garlic powder, and salt. Sear in a large skillet with the olive oil over medium-high heat for about 4 minutes per side until golden and cooked through (165°F).
- Stir the black beans into the same pan and warm for 2 to 3 minutes. Wipe the skillet, then heat each tortilla for about 30 seconds per side. Keep covered.
- Mix the yogurt and lime juice. Slice the chicken against the grain. Spread the yogurt sauce on each tortilla, then layer chicken, beans, cheese, lettuce, and tomato.
- Fold in the sides and roll the burrito tightly. Toast both burritos seam side down in a lightly oiled skillet over medium heat for 1 to 2 minutes per side until crisp. Serve immediately.
Notes
If you like a thicker sauce, let the yogurt and lime sit for 5 minutes before spreading. The burritos can be assembled an hour ahead and toasted right before eating. For a milder flavor, swap the chili powder for smoked paprika.
