High Protein Chicken Burrito Recipe

Ingredients
  

  • 12 oz boneless skinless chicken breasts, halved horizontally
  • 1 tbsp olive oil, plus extra for toasting
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • 1 can (15 oz) black beans, drained and rinsed
  • ¼ cup plain Greek yogurt
  • Juice of ½ lime
  • 2 large (10-inch) flour tortillas
  • ½ cup shredded sharp cheddar or Monterey Jack
  • Handful of shredded romaine or iceberg lettuce
  • ½ cup diced tomato
  • Hot sauce or salsa, for serving

Method
 

  1. Season the chicken cutlets on both sides with chili powder, cumin, garlic powder, and salt. Sear in a large skillet with the olive oil over medium-high heat for about 4 minutes per side until golden and cooked through (165°F).
  2. Stir the black beans into the same pan and warm for 2 to 3 minutes. Wipe the skillet, then heat each tortilla for about 30 seconds per side. Keep covered.
  3. Mix the yogurt and lime juice. Slice the chicken against the grain. Spread the yogurt sauce on each tortilla, then layer chicken, beans, cheese, lettuce, and tomato.
  4. Fold in the sides and roll the burrito tightly. Toast both burritos seam side down in a lightly oiled skillet over medium heat for 1 to 2 minutes per side until crisp. Serve immediately.

Notes

If you like a thicker sauce, let the yogurt and lime sit for 5 minutes before spreading. The burritos can be assembled an hour ahead and toasted right before eating. For a milder flavor, swap the chili powder for smoked paprika.
