High Protein Breakfast Casserole Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb lean ground turkey (or turkey sausage)
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cups baby spinach, roughly chopped
  • 8 large eggs
  • 1 cup full-fat cottage cheese
  • ½ cup whole milk
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded sharp cheddar cheese

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish. Sauté ground turkey in olive oil over medium-high heat until browned, 5 minutes. Add onion and bell pepper; cook until softened and any liquid evaporates, 5 minutes. Stir in spinach until wilted, 1 minute. Let cool slightly.
  2. Whisk eggs, cottage cheese, milk, garlic powder, salt, and pepper until smooth with small curds.
  3. Spread turkey-vegetable mixture in baking dish. Pour egg mixture over top, then sprinkle with cheddar.
  4. Bake until center is set and top is golden, 35 to 40 minutes (45 to 50 minutes if from fridge). Let rest 10 minutes.
  5. Slice into 8 pieces and serve warm.

Notes

Resting before slicing is key for clean cuts. If you assembled the casserole the night before, add the extra baking time listed and check the center before removing from oven.
