High Protein Breakfast Burrito Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb lean ground turkey sausage
  • ½ medium yellow onion, diced small
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 large eggs
  • 1 cup liquid egg whites
  • ½ tsp kosher salt
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • ¼ tsp black pepper
  • 1 cup shredded reduced-fat cheddar cheese
  • 4 large whole wheat tortillas (10-inch)
  • Salsa, hot sauce, or plain Greek yogurt, for serving

Method
 

  1. Heat oil in a large nonstick skillet over medium-high. Add sausage and onion, cook 6 minutes until no pink remains, breaking into small crumbles. Stir in garlic 30 seconds.
  2. Reduce heat to medium. Add beans, eggs, egg whites, salt, cumin, chili powder, and pepper. Cook, stirring constantly, about 3 minutes until eggs are just set but still shiny.
  3. Place tortillas on work surface. Sprinkle ¼ cup cheese down center of each, top with one-quarter of the warm egg mixture.
  4. Fold sides in over filling, roll up tightly. For serving now, toast seam-side down in a dry skillet over medium heat 1 minute per side until golden. Slice and serve with salsa or yogurt. For freezing, wrap each burrito in foil before toasting; crisp in a skillet after reheating.

Notes

If freezing, let the filling cool slightly before assembling so the tortilla does not trap steam. After microwaving from frozen, a quick 1-minute pan toast per side revives the texture perfectly.
