High-Protein Blueberry Muffins Recipe

Ingredients
  

  • 3/4 cup vanilla protein powder
  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup milk
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup oat flour
  • 1/4 cup ground flaxseed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh blueberries

Method
 

  1. Blend the cottage cheese, eggs, maple syrup, milk, melted oil, and vanilla until smooth, about 30 seconds.
  2. In a large bowl, whisk the oat flour, protein powder, flaxseed, baking powder, baking soda, and salt until evenly combined.
  3. Pour the wet mixture into the dry ingredients and scatter the blueberries on top. Gently fold with a spatula until no dry flour remains, about 15 to 20 strokes.
  4. Divide the batter among a greased or lined 12-cup muffin pan, filling each about three-quarters full. Bake at 350°F (175°C) for 20 to 22 minutes, until golden and a toothpick comes out clean.
  5. Cool the muffins in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

If you prefer a less sweet muffin, reduce the maple syrup to 2 tablespoons or swap it for 1 mashed banana. The muffins freeze beautifully, so make a double batch.
