- Heat oil in a large pot over medium-high heat. Add ground beef and cook, breaking up, until browned, about 6-8 minutes. Stir in onion and bell pepper; cook until softened, 4-5 minutes. Add garlic and cook 30 seconds.
- Reduce heat to medium. Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook 1 minute until fragrant.
- Pour in diced tomatoes and tomato paste; stir until paste dissolves. Add beef broth. Bring to a simmer, then reduce heat to low. Partially cover and simmer 20 minutes, stirring occasionally.
- Add kidney beans, black beans, and pinto beans. Stir and simmer uncovered 10 minutes until heated through.
- Remove from heat, stir in lime juice. Ladle into bowls and top with cheese, sour cream, cilantro, or jalapeños.
Notes
For the thickest texture and best flavor, let the chili sit off the heat for 10 minutes before serving. If it thickens too much during storage, reheat with a splash of broth.
