High Protein Banana Muffins Recipe

Ingredients
  

  • 2 very ripe bananas, mashed (about 1 cup)
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1 scoop vanilla or unflavored protein powder (about 25g)
  • 1 cup oat flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp honey or maple syrup (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line 4 cups of a muffin tin with paper liners. In a large bowl, mash the bananas, then whisk in the eggs, Greek yogurt, protein powder, and honey.
  2. In a separate bowl, whisk the oat flour, baking soda, cinnamon, and salt until no lumps remain.
  3. Pour the wet ingredients into the dry. Fold with a spatula just until no dry streaks remain.
  4. Divide the batter among the lined cups and bake for 18 to 22 minutes, until a toothpick comes out clean. Cool in the tin for 5 minutes.
  5. Transfer the muffins to a wire rack. Serve warm or at room temperature.

Notes

If your protein powder already contains sweetener, you might skip the honey altogether. The muffins are softest on day one but stay moist for a few days stored at room temperature.
