High-Protein Banana Bread Recipe

Ingredients
  

  • 3 large very ripe bananas, mashed
  • 1/2 cup plain Greek yogurt
  • 1/4 cup melted coconut oil or unsalted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (100g) vanilla or unflavored whey protein powder
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar or coconut sugar
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 cup chopped walnuts or dark chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment. Mash the 3 bananas in a large bowl until mostly smooth.
  2. Add the 1/2 cup yogurt, 1/4 cup melted oil, 2 eggs, 1 tsp vanilla, and 1/2 cup sugar; whisk until smooth, about 1 minute.
  3. Sprinkle the 1 cup protein powder, 1 cup flour, 1 tsp baking soda, 1/2 tsp salt, and cinnamon over the wet ingredients. Fold with a spatula just until no dry streaks remain; stir in walnuts or chocolate chips if using.
  4. Scrape batter into the pan and smooth the top. Bake 45-50 minutes until a toothpick comes out with moist crumbs. Cool in pan 10 minutes, then lift out and cool on a rack.
  5. Slice and serve warm, with almond butter or honey if you like.

Notes

Cool completely before storing, or trapped steam will soften the crust. For a nut-free version, skip the walnuts or use chocolate chips. The loaf slices best with a serrated knife.
