- Place cottage cheese, milk, Parmesan, garlic, butter, salt, and nutmeg (if using) in a blender. Blend on high for 60 to 90 seconds until completely smooth, scraping down the sides once.
- Pour the mixture into a small saucepan and set over medium-low heat. Whisk constantly for 3 to 5 minutes until warmed through and slightly thickened. Do not let it boil.
- Toss the warm sauce with hot cooked pasta, adding a splash of starchy pasta water if needed to loosen the sauce. Toss for about 30 seconds until glossy.
- Spoon the pasta into bowls, pour over any remaining sauce, and finish with extra grated Parmesan and black pepper. Serve immediately.
Notes
The sauce thickens as it sits, so serve it right after tossing. If you have leftovers, store the sauce separately from the pasta to keep it from turning pasty. Reheat gently and always add a little liquid.
