Ingredients
  

  • ¼ cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic, grated
  • 1 tsp grated fresh ginger
  • Freshly ground black pepper

Method
 

  1. Whisk the soy sauce, mirin, sesame oil, garlic, ginger, and a few cracks of pepper in a small bowl.
  2. Place a 1-pound steak in a dish, pour the marinade over it, and turn to coat. Let it sit at room temperature for 15 to 20 minutes, or refrigerate up to 2 hours.
  3. Heat a heavy skillet over high until smoking. Pat the steak dry, then sear for about 4 minutes per side for medium-rare, until deeply browned.
  4. Rest the steak for 5 minutes, slice against the grain, and serve with the pan juices.

Notes

This marinade is meant for fast flavor; don’t stretch the marinating time past 2 hours, or the texture can turn a little mushy from the soy sauce. If you need to prep further ahead, mix the marinade and store it in the fridge, then combine with the steak just before cooking.
