Method
- Mix softened butter with garlic, rosemary, thyme, sage, salt, and pepper until well combined.
- Preheat oven to 375°F (190°C). Separate skin from turkey breast meat, spread two-thirds of butter under skin, and rub remaining butter over skin. Season with extra salt, squeeze lemon over top, and place lemon halves in pan.
- Roast on a rack in a roasting pan for 60 to 75 minutes, until skin is deep golden and thermometer in thickest part reads 160°F (71°C). Tent with foil if browning too fast.
- Rest turkey on a cutting board for 15 minutes, then slice against the grain and serve with pan drippings.
Notes
The resting time is not counted in the cook time above, so plan for those 15 minutes before slicing. If your breast is larger than 6 lbs, extend roasting time by about 10 minutes per pound and rely on your thermometer.
