Herb Crusted Salmon Recipe

Ingredients
  

  • 4 (6-oz) skin-on salmon fillets, about 1 inch thick
  • 2 tbsp Dijon mustard
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely chopped fresh parsley
  • 2 tbsp finely chopped fresh dill
  • 1 clove garlic, minced
  • Zest of 1 lemon
  • 2 tbsp olive oil, plus a little for the pan
  • 1/2 tsp salt, divided
  • 1/4 tsp black pepper, plus more for the fish

Method
 

  1. Stir together panko, parsley, dill, garlic, lemon zest, olive oil, 1/4 tsp salt, and pepper until clumpy.
  2. Pat salmon dry, season with remaining salt and pepper, brush with mustard, and press crumb mixture on top.
  3. Bake on an oiled sheet pan at 400°F (200°C) on the upper rack for 12 to 15 minutes, until crust is golden and fish flakes.
  4. Lift fillets off the skin, squeeze lemon juice over them, and serve immediately.

Notes

If your fillets are especially thick, you can finish them under the broiler for 1 minute to crisp the crust further without cooking the fish past your preferred doneness.
