Method
- Pat beef dry, toss with salt, pepper, and flour. Heat 1 tbsp oil in a Dutch oven over medium-high heat. Brown beef in two batches, about 3 minutes per side, then set aside.
- Lower heat to medium, add remaining 1 tbsp oil and onion. Cook 5-6 minutes until soft. Add garlic and cook 30 seconds.
- Stir in tomato paste for 1 minute. Pour in wine and scrape up fond, then reduce by half, about 2 minutes. Return beef, add broth, bay leaves, and thyme. Bring to a boil, cover, reduce to a low simmer, and cook 1 hour.
- Nestle in potatoes, carrots, and celery. Return to a simmer, leave lid ajar, and cook 25-30 minutes until vegetables are tender and beef is fall-apart.
- Remove bay leaves, stir in Worcestershire sauce, and season to taste. Ladle into bowls and top with parsley.
Notes
If you have time, let the stew cool and refrigerate overnight. The broth thickens into a rich gravy and the flavors meld even more. Reheat gently the next day.
