- Heat oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown in batches until deeply golden, about 4 minutes per side. Transfer to a plate.
- Lower heat to medium. Add onion and carrots and cook until softened, about 5 minutes. Stir in garlic and cook 30 seconds.
- Add beef broth, Worcestershire sauce, thyme, and bay leaf, scraping up browned bits. Return beef to pot, bring to a boil, then simmer covered for 30 minutes.
- Add diced potatoes, season with salt and pepper, and simmer covered until potatoes are tender, about 20 minutes.
- Remove bay leaf, adjust seasoning, ladle into bowls, and garnish with parsley. Serve hot.
Notes
The soup thickens as it stands; when reheating, add a splash of beef broth to loosen it. For a creamy version, stir in 1/2 cup heavy cream at the end.
