Hearty One-Pot Beef and Potato Soup Recipe

Ingredients
  

  • 1 1/2 lbs beef stew meat, cut into 1-inch chunks
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 1/2 lbs Yukon gold potatoes, peeled and diced
  • Salt and pepper
  • Fresh parsley, chopped, for garnish

Method
 

  1. Heat oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown in batches until deeply golden, about 4 minutes per side. Transfer to a plate.
  2. Lower heat to medium. Add onion and carrots and cook until softened, about 5 minutes. Stir in garlic and cook 30 seconds.
  3. Add beef broth, Worcestershire sauce, thyme, and bay leaf, scraping up browned bits. Return beef to pot, bring to a boil, then simmer covered for 30 minutes.
  4. Add diced potatoes, season with salt and pepper, and simmer covered until potatoes are tender, about 20 minutes.
  5. Remove bay leaf, adjust seasoning, ladle into bowls, and garnish with parsley. Serve hot.

Notes

The soup thickens as it stands; when reheating, add a splash of beef broth to loosen it. For a creamy version, stir in 1/2 cup heavy cream at the end.
