- Heat oil in a large heavy pot over medium-high. Brown the beef in two batches for about 8 minutes per batch, until deeply crusted, then set aside.
- Lower heat to medium, add onion and bell pepper, and cook 5 minutes until softened. Stir in garlic for 30 seconds.
- Add tomato paste, chili powder, cumin, smoked paprika, and oregano. Cook 1 minute, then add chipotles, adobo sauce, crushed tomatoes, diced tomatoes, and broth. Scrape up any browned bits.
- Return beef to the pot, bring to a simmer, partially cover, and cook 45 minutes, stirring occasionally.
- Stir the masa harina slurry into the chili and cook 5 minutes until thickened. Ladle into bowls and top with cheddar, sour cream, and cilantro.
Notes
Leave a thin layer of rendered fat in the pot after browning the beef; it carries all the spice flavor. If you have time, let the chili rest off the heat for 10 minutes before serving to let the sauce set up even more.
