- Cook the ground beef in a large pot over medium-high heat until browned, about 5-7 minutes. Drain fat and set beef aside.
- Add olive oil if needed, then cook the onion until soft, about 4 minutes. Stir in garlic for 30 seconds.
- Add the cabbage and cook, stirring, until it begins to wilt, about 5 minutes.
- Mix in diced tomatoes, beef broth, tomato paste, paprika, thyme, salt, and pepper. Return the beef to the pot.
- Bring to a boil, then reduce heat and simmer, partially covered, until cabbage is tender, 15-20 minutes. Adjust salt if needed.
- Ladle into bowls and top with fresh parsley. Serve hot.
Notes
For a thinner broth, stir in an extra cup of beef stock near the end of cooking. Leftovers thicken as they sit, so add a splash of water when reheating. This soup tastes even better the next day.
