Hearty High Protein Taco Soup Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey (93/7 lean)
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can kidney beans, drained and rinsed
  • 1 (15-oz) can corn, drained
  • 1 (14-oz) can crushed tomatoes
  • 3 cups low-sodium beef broth
  • 1 chipotle pepper in adobo, minced (optional)
  • Salt, to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, tortilla chips, chopped cilantro

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Add ground turkey and cook, breaking it up, for about 5 minutes until browned. Season with a pinch of salt.
  2. Add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook 30 seconds more.
  3. Sprinkle taco seasoning over the meat, stir for 30 seconds, then pour in crushed tomatoes, broth, beans, corn, and chipotle. Bring to a boil.
  4. Reduce heat to medium-low and simmer uncovered for 12 to 15 minutes, stirring occasionally.
  5. Ladle into bowls and top with cheese, sour cream, avocado, chips, and cilantro as desired.

Notes

If the soup thickens too much after resting, stir in a splash of broth or water when reheating. Leftovers keep well in the fridge and the flavors get even better the next day.
