Method
- Heat olive oil in a large pot over medium-high heat. Add ground turkey and cook, breaking it up, for about 5 minutes until browned. Season with a pinch of salt.
- Add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook 30 seconds more.
- Sprinkle taco seasoning over the meat, stir for 30 seconds, then pour in crushed tomatoes, broth, beans, corn, and chipotle. Bring to a boil.
- Reduce heat to medium-low and simmer uncovered for 12 to 15 minutes, stirring occasionally.
- Ladle into bowls and top with cheese, sour cream, avocado, chips, and cilantro as desired.
Notes
If the soup thickens too much after resting, stir in a splash of broth or water when reheating. Leftovers keep well in the fridge and the flavors get even better the next day.
