Method
- Heat the olive oil in a large pot over medium heat. Add the onion and cook for about 5 minutes until soft and translucent.
- Add the garlic, cumin, smoked paprika, and cinnamon. Stir constantly for 1 minute until fragrant.
- Add the squash, tomatoes with their juices, chickpeas, and broth. Season with 1/2 tsp salt and a few grinds of pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 25 to 30 minutes until the squash is fork-tender.
- Stir in the kale and cook for 3 to 4 minutes until wilted and bright green.
- Remove from heat and squeeze in the lemon juice. Taste and adjust seasoning, then ladle into bowls and serve with a drizzle of olive oil or a pinch of red pepper flakes.
Notes
If you prefer a thicker stew, use the back of a spoon to mash a few squash cubes against the side of the pot before adding the kale.
