Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 yellow onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 3 tablespoons homemade or low-sodium taco seasoning
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (4-ounce) can diced green chiles
  • 2 cups low-sodium chicken broth
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 lime, juiced
  • Salt and black pepper, to taste

Method

  1. Heat oil in a large pot over medium-high heat. Add turkey and cook until no longer pink, about 5 minutes. Stir in onion and bell pepper and cook until softened, 3 to 4 minutes.
  2. Add garlic and taco seasoning and cook, stirring, for 1 minute until fragrant.
  3. Stir in diced tomatoes, green chiles, broth, beans, and corn. Bring to a boil, then reduce heat and simmer for 15 minutes. Season with salt and pepper.
  4. Remove from heat and stir in lime juice. Ladle into bowls and add your favorite toppings like avocado, cilantro, or shredded cheese.

Notes

If you prefer a thicker soup, mash half the black beans before adding them to the pot. To keep sodium in check, use low-sodium broth, no-salt-added canned goods, and hold off on extra salt until you taste the finished soup. The lime is what pulls everything together, so don’t leave it out.
